RECIPE: RICH CHOCOLATE COOKIE

Flour: 41.70 g, Sugar Powder: 18.30 g, Fat: 19.10 g Invert Syrup: 1.20 g, Emulsifier: 0.50 g, Caramel Colour: 0.10 g, Cocoa Powder: 0.80 g
Salt: 0.30 g, Soda: 0.30 g, Ammonium Bicarbonate: 0.20 g, Skimmed Milk Powder: 0.50 g, Chocochips: 12.50 g, Golden Dipt Vanilla Flavour: 0.10 g, Golden Dipt Chocolate Flavour: 0.20 g, Cold Water: 4.20 g

METHOD:
  • In a creaming bowl, mix fat, emulsifiers, invert syrup, liquid flavours, and caramel colour.
  • Add sugar powder, skimmed milk powder, and cocoa powder. Continue creaming.
  • In a separate bowl, dissolve salt, soda, and ammonium bicarbonate in cold water.
  • Transfer to the mixing bowl and continue with creaming. Add chocochips.
  • Mix for 90 seconds or until mixing is complete.
  • Transfer into plastic sheet for manual sheeting or wire cut.
  • Bake at 180°C for 12 minutes in oven.
  • Cool at room temperature to have the cookie ready.
